I don’t know about you, but I do a better job watering and pruning my herbs than I do eating them. Until now. It finally dawned on me that I really like fresh herbs in my food. Especially in the summer. I’m discovering new ways to get them into my meals. Here’s a simple one.When I’m in a hurry for a quick meal, a.k.a. lazy, I boil some small potatoes and make this simple dish.
I had this for dinner last night. Low calorie and yummy! And easy! I just went out to my porch, snipped a few herbs that I thought would be good in this dish (parsley, thyme, sage leaves,oregano) and tossed it all together with some butter, a dollop of sour cream and some salt and pepper.
Must have with a glass of Pinot Grigio!
